This dish proves just how incredibly delicious a simple chicken and vegetable stew can be. Chicken gumbo combines chicken leg with the "holy trinity of Cajun cuisine": onion, celery, and bell peppers. Accompanied by the fantastic Cajun spice blend—which you can easily mix yourself—the gumbo goes perfectly with white rice. Let's gumbo!
Ingredients for 2 people:
- 1 bottle of Gamba Zamba
- 1 can of diced tomatoes
- Oil for frying
- 2 organic boneless chicken drumsticks
- Salt to taste
- 2 green bell peppers
- 2 onions
- 1 clove of garlic
- 150g celery stalks
- 2 tsp Cajun spice mix (can also be mixed yourself)
- 150g Bamsati rice

- Briefly sauté the diced chicken in oil, then remove it from the pot. Add the chopped vegetables directly to the pot and sauté with garlic and spices for about 2 minutes. Add the broth and diced tomatoes, and simmer over low heat for 15 minutes. Now add the sautéed chicken back in and cook for another 5 minutes. Serve the finished chicken gumbo in a bowl with rice and enjoy!
- Make your own Cajun spice mix: 2 tsp sweet paprika powder, 1 tsp hot paprika powder or cayenne pepper for more heat, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried oregano, 1 tsp dried thyme, 1 tsp ground black pepper, 1 tsp ground white pepper, 1 tsp salt, ½ tsp chili flakes (optional, for extra heat)
