We love udon noodles and have finally discovered some organic quality ones that we really enjoy . Udon are one of the broader types of noodles in Japanese cuisine . They swell a little while cooking . The noodles can be eaten cooked , cold, fried or served in a hot soup . Since these noodles are rather neutral in taste , the wheat noodles go very well with our fine broths , such as the spicy Dashi Umami broth or the popular curry noodle soup , also known as Kare Udon .
